You have to try this recipie

You have got to try this, it was SO good. And it sounds wierd, but it was again SO good. I personally give it a 10 out of 10.

Meaty Mexican Lasagna
Serves 6

1 tablespoon vegetable oil
1 medium onion, thinly sliced
2 medium green bell peppers, seeded, deribbed and sliced
8 ounces diced green chilies
1 pound cooked lean ground beef (or whatever is on sale)
1 tsp ground cumin
1 (14.5-oz.) can diced tomatoes, undrained
1/3 cup chopped cilantro
Salt and pepper, to taste
9 ounces corn tortillas
1 (16-oz.) can vegetarian refried beans
2 cups shredded Pepper Jack cheese
1 cup diced black olives
Sour Cream (optional)

Preheat oven to 425 degrees. Lightly grease a 9- x 13-inch baking dish.

Brown beef add cumin. Set aside

In a large skillet over medium heat, saute onion, bell pepper and chilies for 2 to 4 minutes, or until onion has softened. Add cooked beef, tomatoes, cilantro and salt and pepper to taste; bring to a boil, reduce heat, cover and simmer for about 5 minutes.

Meanwhile, cut tortillas in half and place a layer on the bottom of the baking dish, overlapping as needed. Spoon about 1 cup of the sauce over the tortillas; top with one-third of the refried beans, one-third of the cheese and one-third of the olives. Repeat layers until you end with a layer of tortillas.

Bake, uncovered, for 20 to 25 minutes or until casserole is warmed through and cheese is melted.

Top with sour cream, if desired.

SERVING SUGGESTION: A big salad.

Tuesday

The kids are in bed right now, and I am checking my blogs, and watching The Work and The Glory III. It is kinda difficult to watch and type at the same time. The kids are still working at going to bed. Alec is because he fell asleep today, and that never makes for a good and quick nights. In fact, i have even turned off his light...which I never do, cuz he hates it. And I have also taken his books away. Again he hates that. He usually reads and till he falls asleep, which doesn't take very long. I am also figuring that when i go back up to bed, he is going to be asleep in Logan's bed. he has done this once before, fallen asleep on Logan's bed. They were asleep together. It is really cute. But it wakes the wake up really early together. So I will be moving Alec off of Logan's bed if this is the case.

Swimming lessons is going good. And I think I mentioned it, that I am cooking my main meal at lunch, and it is very nice to have the main meal at noon or one. Today we had Mexican Lasagna, it was SO good. I give it a 10. And yesterday we had Chicken Fajita. So yum.

Lava is Pregnant. She is getting so big. She is due around the fourteenth of may. I am excited about this. I pray that we have more then four. Seven like last year would be great.

wednesday

well hopefully it is a new day. For a couple of days, I have been thinking I was getting sick. My mom was REALLY sick last week, and so this week when I started to feel unwell, I just figured that it was cuz I was getting whatever she had. I had hot flashes, and I was achy. But this morning I am feeling MUCH better. So that is great news. Logan on the other hand, he did get really sick last night. He was really whiny while I was getting dinner ready. He wouldn't let me put him down. Then when we all sat down for dinner, he really kicked the whininess up a notch. He started to cry, then he cried harder. I put him over my shoulder, and he threw up. Oh man, it was so gross. Luckily, it wasn't on carpet. So since I am now covered in throwup, I have lost my ability to eat, and I went upstairs to jump in the shower with Logan. So we shower, and get dressed. Then I hold him while he falls asleep. It is around 6pm. He wakes up at 7, and is awake, but tired for about a hour. Then he throws up again, and promptly falls asleep. Here I put him in the pack and play, downstairs and get comfy for a long night on the couch. He woke up a few times, and didn't throw up. So around 3 I took him back upstairs to sleep, and he sleep till 7:15. Not long enough. But I didn't get a whole lot of sleep. But I do feel better, hopefully he is better now, and I am done trying to get sick.

i have been doing really good about working out, but this morning Logan won't let me put him down. So I will have to do sit ups, or something later.

Thursday

So this week has flown by. I haven't been on the computer very much because Ku is starting school again, and he uses the computer for school.

The workers are here finally working on my mom's house. It is going to be so pretty once it is finally finished. It is about time. The tile layers and other workers have been laid up by the plumier. the plumier that was suppose to be here to do the pluming was too busy to be just here. So he has been doing a little bit here and there. So nobody could do their job till he was done. Finally after four mths, he was far enough done that other could come do there own work.

It is finally warm enough to go outside and really enjoy the days. It is around 70 today, so I think i will take the kids to the park. Yea, we love the park. Alec is doing good. He just has been loving Logan, they get along so well.

Sunday is my mom's birthday, as well as Easter. So Nicole planned the dinner, and it is here at mom's house. So I guess that means that I am cleaning the house. Oh yea, now that is so super duper exciting.

Logan is in a big boy bed now. It has been kinda hard because he went to bed SO easy in his crib, I wasn't sure I was really ready for the change, but we took the crib down on Sunday, so I knew it was time. Alec sleeps on the top bunk, and Logan is sleeping on the bottom. So it works. I was a little worried that Alec would try to keep Logan up at night, but so far, Alec is asleep really fast, and so that is helpful.
